The Agaricus blazei mushroom is an edible, almond-flavored mushroom recognized for its beneficial effects on immune function. Epidemiologists studying a mountainous population in Brazil discovered it when they noticed a low incidence of illness and longevity among the group. The benefits were associated with the group's intake of the mushroom. The Agaricus blazei mushroom contains polysaccharide compounds, consisting of thousands of glucose molecules, known as alpha- and beta-glucans, chemically bound together.
